This handy device is used by ice cream makers, chocolatiers, pastry shops and restaurants. It allows you to cover ice cream or wafers with a delicious layer of chocolate. You can also use it to make drip cakes, chocolate candies and other delicacies.
Low melting point
One of the challenges when melting chocolate is to prevent it from burning. Since chocolate melts at low temperatures, it is recommended not to set the temperature too high so that the chocolate melts slowly and evenly. The digital display shows the exact temperature of the water and GN trays. You can adjust the temperature up or down using the arrow buttons. This is especially important for white chocolate, which melts at 36°C, which increases the risk of burning compared to dark or milk chocolate.
Chocolate cups
This chocolate calotte is easy to operate. Fill the tank with water; make sure the water level is between the minimum and maximum marks. Place 4 GN containers of 1/6 size and 10 cm deep in the chocolate melter. Switch on the chocolate melter and set the desired temperature. The indicator light on the display shows when the chocolate melter has reached the correct temperature. Now fill the GN containers with chocolate. The best way to do this is to use chocolate cups. These are teardrop shaped chocolate and special melting chocolate. You can also use a table, which you cut into small pieces before placing in the GN container. However, then there is a chance that some harder pieces of chocolate will remain in it. Stir occasionally and remove the GN container from the melting gun as soon as the chocolate has melted sufficiently.
Prevent lumps in chocolate
Since the four GN containers are placed next to each other, there is a high risk of water getting into the chocolate with this chocolate melter. If this water gets into the chocolate, the chocolate will clump. We therefore recommend that you put the lids supplied on the GN containers before removing the container from the chocolate melter. The lids have a practical recess for a spoon, so you can stir occasionally without having to take the spoon out of the container again. It is also more convenient to remove the front GN containers from the chocolate melter first and then the back ones. This way, there is less chance of water spilling.
Steam and water discharge
This chocolate melter is equipped with two practical drains on the side of the appliance. The upper drain is the steam release valve. You can open and close this drain. You must ensure that the steam release valve is open when the appliance is switched on. This allows the hot air from the hot water to escape through the drain valve. This has the advantage of preventing steam burns when you want to remove the GN container. The lower drain valve is used to drain the water from the machine. After melting the chocolate, you can open this drain and clean the machine. Connect a drain hose to the drain or place the chocolate melter next to the sink. You can then drain the water into the sink and drain it through the drain pipe.
Easy cleaning of the chocolate melter
To clean the chocolate melter, make sure the plug is unplugged from the socket. Make sure the appliance and the water have cooled down sufficiently. Drain the water from the chocolate melter through the water outlet and dry the inside and outside of the appliance thoroughly. Clean the GN containers and lids with warm water and a mild detergent. It is essential to dry these loose parts well to prevent the GN containers from rusting.
