The use of blast chilling has several advantages for catering operations. It helps prevent bacterial contamination and maintains the quality of food at the highest possible level for a longer period of time. By rapidly cooling or freezing products, you prevent the formation of coarse crystals. In addition, there is minimal loss of taste, moisture and weight. By using this blast chiller, you can store prepared dishes for longer and there is less food waste. This blast chiller can be used with GN trays or Bakerynorm trays. You can place 5 x 1/1 or 40 x 60 Bakerynorm trays in it. These are not included in the delivery but can be ordered separately.
Rapid cooling and freezing
Once you put the food in this professional blast chiller, it starts to cool. Within 90 minutes, the food can be cooled to 3°C and in approximately four hours, it can be further cooled and frozen to -18°C. The desired temperature can be set using the intelligent digital temperature controller. This blast chiller also has a thermometer in the core and can be used in environments with a maximum ambient temperature of 32°C. It also comes on wheels, which make it easy to transport this top-of-the-line device. It is equipped with a self-closing door with an antibacterial rubber seal and all corners on the inside of the blast chiller are rounded, making it easy to clean. The cooling system consists of a water evaporator and the refrigerant used is R290, which is CFC-free. This blast chiller is also equipped with an automatic defrost function.
Easy cleaning
If you want to clean this appliance, it is important to defrost it first. Before you start cleaning, the temperature in the cooling device must be the same as the ambient temperature. After defrosting the blast chiller, take a damp cloth, warm water and a mild detergent to wipe everything down and clean the appliance thoroughly. Try to use as little water as possible to keep the coating of the appliance in good condition and to prevent corrosion inside. After cleaning, dry everything with a soft cloth before reconnecting the appliance to the power supply.
