Professional cabinets for maturing meat, salami and cheese have been designed and manufactured exclusively in Italy using high quality materials and the most modern technologies to achieve perfect dry maturing.
When designing the device, emphasis was placed on recreating the ideal microclimate and natural methods traditionally used for meat maturation. Based on these assumptions, a unique cabinet with intuitive technology was developed, combining patents in the scope of ventilation, decontamination and oxygenation of meat, salami and cheese.
KLIMA ripening cabinets allow you to perform high-quality and biologically safe ripening processes in a way that is easy and accessible to everyone.
The cabinets are ideal for restaurants, steakhouses, butcher shops, small farms or supermarkets. The possibility of complete control of the dry-aging process of meat, which is a key stage in determining its organoleptic quality and improving its taste and tenderness.
The device features a modern and safe construction in AISI 304 stainless steel (suitable for contact with food in accordance with EC regulations) and coated with cyclopentane for maximum thermal insulation. KLIMA cabinets use patented technologies that make this product unique.
