Bertha can work with any type of charcoal (we do

The temperature is controlled by a slider to reduce or increase the intake flow from the bottom vent, making regulation very fast and efficient
From a cold start, it takes about 30-40 minutes to rise to a cooking temperature of 250-300 degrees.

After another 15 minutes or so, the walls of the chamber will "charge", meaning that Bertha is now using radiant heat
