The Black Mask Gastro convection oven category for gastronomy - with a smaller baking chamber equipped with drawers for GN 1/1 containers.

Airflowlogic™ – A completely innovative approach, in which the deflector (fan cover) has been completely redesigned. The result is better air circulation, which helps to achieve the best values for uniform cooking on every level and in every place of the GN container or 600x400 mm tray. Choosing the Millennial combi oven with the Airflowlogic™ patent is a bet on the highest quality of food processing.
Humilogic™ – A new humidification system that delivers water directly from the fan. It guarantees a maximum level of humidity and significantly lower water consumption. The steam penetrates deep into processed foods and emphasizes their natural taste and aroma. Humilogic™ offers a solution to the best chefs who have the highest demands on their work.

1-POINT PROBE – 1-point probe to detect and measure the temperature inside the food being prepared.
ELECTRONIC 7-INCH TOUCH CONTROL PANEL - Thanks to the electronic control, the desired cooking parameters can be set very precisely. All functions and options are displayed using numbers or icons.

AUTOMATIC WASHING SYSTEM - (optional equipment - installation is only possible directly from the factory), Standard equipment of Gastro and Compact electric combi ovens. 4 washing programs: ECO, NORMAL, INTENSIVE, RINSE, adapted to different levels of chamber soiling. The new economical washing head reduces water consumption by up to 30 %. You save not only your own money, but also the environment. Optional equipment of gas combi ovens.
PRE-HEATING – pre-heating the convection oven chamber to a higher temperature (up to 30 °) than what was originally set
HOLDING – maintaining the optimal temperature of the food after the completion of the cooking cycle
COOLDOWN – rapid cooling of the convection oven chamber for the needs of the next prepared dish that requires different temperature parameters than those currently in the chamber
USB port for easy and fast download and upload of recipes and HACCP system data
PROOFER – the combi oven functions as a cheese maker – this function will certainly be appreciated by confectioners and bakeries

The door seal in the casing of the combi oven is made of strong silicone, which is resistant to high temperatures. The seal can be easily replaced, it is not necessary to call a specialized service
The insulated casing of the convection oven not only saves electricity, but also increases the safety of the kitchen staff
Thanks to the drip pan under the door, condensed steam does not drip directly onto the floor. A dry floor under and in front of the combi oven is a guarantee of the safety of the staff.
